Wow it is April already! We are flying into spring at a pace and very welcome it is too. It is nice to start getting some different seasonal fruit and veg in the supermarkets.
Here is the latest meal plan…
Lunch: Homemade soup
Dinner: Shashlik Skewers with Quinoa Salad and Tahini Dressing
Dinner: Jacket Potatoes with Veg Chilli and a side salad
Dinner: Gnocchi with Roasted Veg, Butter Beans &Tomato sauce and a side salad.
Dinner: Pizza with Salad. I really didn’t feel much like cooking so I picked up a pre made pizza base on my way home from work and made a sauce then topped it with veggies. I made a chickpea salad to go with it.
Dinner: Root Vegetable Dhal with Aloo Gobi.
I always make a big batch of Dhal so I can freeze portions of it for another day. I also made a tomato, cucumber, onion salad and we had Naan bread.
