Vegan Slimming World Meal Plan No: 4

It is week 7 for me on slimming world and my fourth meal plan blog.  I lost 0.5lbs last week which although still a loss and all going in the right direction, I was a bit disappointed.  I’ve reflected on what I ate and although I didn’t go off plan, I didn’t have half as much speed veg and fruit as I usually do.  It was a particularly stressful week for me for a couple of reasons so I reached for more easy meals, pre made stuff etc and less speed.

So… this week I rectified that and I lost 1.5lbs taking me to 1 stone 3.5lbs lost so far. 

Here  is the latest meal plan…

Day 1

Breakfast: Porridge with HEB Oats and HEB Soya Milk + Maple syrup (1 syn)

Lunch: Homemade Vegetable Soup & 2 Ryvita (3syns)

Dinner:  Spicy Mixed Bean Cottage Pie with Crushed Potato topping, Green Beans, Kale & Sweetcorn (Free)

Snacks: Alpro Go On (1 syn), Banana, Apple, Pear, Grapes, Alpen Light Jaffa (3syns), Baked Tofu (Free) 

Day 2

Breakfast: Porridge with HEB Oats and HEB Soya Milk + Maple syrup (1 syn)

Lunch: Bean & Veg Stir fry, using leftover bean cottage pie filling (Free)

Dinner: Cauliflower & Squash Lentil Dhal with Masala Potato Cakes (Free)
I picked these recipe cards up from waitrose and although they were vegan I adapted them to be more SW friendly.

Snacks: Alpen Light Jaffa (3 syns), Apple

Day 3

Breakfast: Carrot Cake Porridge (HEB & HEA, Grated Carrot, Chopped Apple, Cinnamon, Nutmeg, Maple Syrup 1 syn)

Lunch: Leftover Dhal (Free) & Salad

Dinner: Indian Takeaway. Vegetable Jalfreizi (10.5 syns), Rice (Free), Poppadom x2 (8syns), Salad (Free)

Snacks: Grapes, Banana, Apple 

Day 4

Breakfast: Weetabix (HEB) with milk from HEA, Apple, Pear, Plum

Lunch: Roasted Vegetable Couscous (Free) & Salad

Dinner: Squash Laksa Bake (4.5syns for coconut cream) & Salad

This is an adapted recipe from Jamie Oliver’s book ‘Everyday Super Food’.  It is a one pot baked dish with brown rice, chunks of squash, Thai curry paste and coconut cream.

Snacks: Alpro Go On Plain (1 syn), Pear, Apple, Alpen Light Jaffa (3syns)

Day 5

Breakfast: Overnight Oats (HEB) with Alpro Plain with Coconut (1syn), Pear and Apple.

Lunch: Leftover Laksa Bake (4.5 syns) & Salad

Dinner: Jacket Potato, Baked Beans, Linda McCartney Red Onion sausages & Salad (Free)

Snacks: Moofree Mini Moo Chocolate Bar (7 syns), Grapes, Apple

Day 6

Brunch: Tofu a Scramble with Peppers, Courgette & Mushrooms & Bagel Thin (HEB)

Dinner: Linda McCartney Shredded Duck Pancakes and stir fry veg (9 syns)

Snacks: Alpen Light (3syns)

Day 7

Breakfast: Weetabix (HEB)

Lunch: Roasted Vegetables & Couscous (Free)

Dinner: Mushroom, Squash & Cannellini Bean Cacciatore (kind of tomato stew) with Greens (Free)
